Sloppy Joe Cornbread Casserole

For the Sloppy Joe: Brown the ground beef and diced onion in a large skillet. Once browned, add the garlic and cook for another minute. Stir in the remaining Sloppy Joe ingredients: ketchup, tomato paste, Worcestershire, yellow mustard, brown sugar, beef Better Than Bouillon, and water. Simmer the mixture until it thickens. Spread the Sloppy Joe mixture evenly into a 9x13 inch baking dish and top with sharp cheddar cheese.

For the Cornbread: In a separate bowl, mix together the cornbread ingredients: 2 boxes Jiffy mix, 1 can creamed corn, ¾ can drained golden sweet corn, 2 eggs, ⅔ cup sour cream, 4 tbsp melted butter, and ¼ cup honey. Spread the cornbread mixture over the cheesy Sloppy Joe layer in the baking dish. Bake uncovered at 375°F (190°C) for 30–40 minutes, or until the cornbread is golden brown and set.

Finish: Once out of the oven, immediately brush the hot cornbread all over with a mixture of ½ stick melted butter and about ¼ cup honey. Let the casserole sit for 10 minutes before digging in.
